Paleo Granola

This is for the times you just want a little sweetness in your morning. Full of antioxidant, fiber rich nuts and fruit, this is sweetness you can feel good about. This recipe is really a template, you can switch out the nuts, seeds and fruit depending on what you like…have fun with the endless possibilities.

  • Ingredients

    1 ½ cup sliced or chopped almonds

    1 ½ cup coconut flakes

    1 ½ cup walnuts, chopped or pureed into a meal (I use the dry container of my vitamix, about 30 seconds…if you go too long it turns into nut butter).

    1 ½ cup pecans, chopped or pureed into a meal

    1 cup dried fruit…whatever you prefer…cranberries, cherries, strawberries…

    1 cup medjool dates, chopped (don’t switch out the dates, they help to bind the ingredients and add to the sweetness)

    ½ cup coconut oil, melted (extra for greasing the pan)

    ½ cup honey

    2 tsp cinnamon

  • Directions

    1. Combine all your dry ingredients in a large bowl.

    2. Add the honey and melted coconut oil and mix thoroughly to combine…I use my hands.

    3. Grease your pan with the extra coconut oil and pour in the mixture.

    4. Bake at 275 degrees, stirring every 15 minutes
